1 X 350g/12oz packet plain cake mix
4 tablespoons jam
Prepare the cake mix according to the instruc¬tions on the packet, adding the required amount of eggs and liquid.
Line the bases of two 18 cm/7 inch round shallow dishes with greaseproof paper and grease the sides. Divide the mixture evenly between the dishes.
Cook the cakes separately. Cook on LOW (30%) for 4 to 6 minutes or cook on FULL (100%) for 2 minutes, until the top is just dry, giving the dish a quarter-turn every 1 minute. jeave to STAND in the dishes for 5 minutes, hen run a knife round the edge of each cake and tu«i out on to a wire rack. When cool, carefully remove the greaseproof paper.
PJace one cake under a preheated grill to rown the top. Spread the .other cake layer with , eJam and place the browned cake layer on top. MAK£S one 18cm/7 inch round cake
