Fried rice : Rice Recipes

Fried rice is a simple dish that can be prepared in as little as five minutes.

Ingredients

The basic ingredients are as follows:
rice
egg
spring onions
light soy sauce
dark soy sauce (optional)
oil & seasoning

You have just plain old fried rice but for something special you can add any extra ingredients you like. Here are a few suggestions:
chicken chunks (or left-over chicken shreds)
Char sui (Chinese barbeque pork)
pineapple and sweetcorn
sliced marinated beef
curry and seafood (add curry powder for curry flavour)

Procedure
Boil the rice and leave to cool for a few hours so that most of the moisture has evaporated. This prevents the rice from sticking too much when you stir fry. If you intend to add meat, use a bit of oil and stir fry the meat until cooked and place the cooked meat aside to be added later.
Whip the egg. dice the spring onions.
Put two tablespoons of oil into the wok and heat until hot, then pour the egg into the hot oil. Keep stirring the egg as it crackles in the oil, breaking it up into smaller pieces.
Keep stirring, adding the rice into the wok. Stir the egg and rice evenly and add a sprinkle of salt for seasoning (not too much, as you will add soy sauce later on).
Add your extra ingredients, such as the meat you cooked earlier, and stir into the mixture. Add light soy sauce (about 1 tablespoon per serving). You can optionally add dark soy sauce, which mainly makes it look darker (the amount is 1 part light soy to one third dark soy). Stir soy sauce evenly and finally add spring onions.

Note: If you use a wok at high heat, your fried rice may burn. To prevent this, keep stirring rigorously and turn the fried rice from bottom upwards or turn the heat down.
