Strawberry Preserve Microwave Mint Jelly

1 kg/21b large strawberries, hulled
1.5 kg/3 lb sugar 3 tablespoons lemon juice
Rinse the strawberries and dry thoroughly. Put the strawberries and sugar into a large bowl. Toss gently, then cover and leave for 24 hours.
Add the lemon juice and stir thoroughly. Cook on FULL (100%) for 10 to 15 minutes, stirring two or three times during cooking, until the mixture reaches a full rolling boil. Cook on FULL (100%) for 5 lo 10 minutes, stirring occasionally, until the syrup is thick.
Leave to cool slightly, then pour into warm sterilized jars. Allow to cool, then cover with waxed paper and seal. Store in a cool place until required. MAKES about 1.15 kg/4 lb
Note: This recipe produces a preserve of whole strawberries in a thick syrup, not a thick jam.
